Bobotie and Cape Malay Sweet Yellow Rice

A classic South African dish, seasoned to perfection and served with fragrant yellow rice.

Bobotie
2 Tbsps oil
½ tbs butter
500g beef mince
1 medium onion, diced
3 garlic cloves, crushed
1 Tbsp roasted masala
1 Tbsp ground cumin
1 Tbsp coriander powder
1 Tbsp turmeric
½ tsp salt
½ tsp pepper
1 lemon, zest and juice
2 slices of bread soaked in water, lightly squeezed and mashed with a fork
Custard Topping
1 cup sour cream
½ cup double cream yoghurt
½ tsp salt
Pinch of pepper
2 eggs
4 bay leaves
Cape Malay Sweet Yellow Rice
2 cups Akila White Rice
1L of water
2 cinnamon sticks
3 cardamom pods
1 tsp salt
½ tsp turmeric
2 Tbsps butter
2 Tbsps sugar
½ cup raisins
Garnish (optional)
A handful of fresh coriander
1 tsp lemon zest

Bobotie

Preheat oven to 180℃

Heat a pan over medium heat. Place the oil and butter in the pan and allow the butter to melt.

Add the beef mince to the pan and fry until loose and crumbly, add the onion and cook until softened.

Add the garlic and spices and cook until the mince is fragrant.

Season with salt, pepper and lemon juice and add the mashed bread, stir together until Combined.

Spray an oven dish with Spray n Cook and evenly spread the beef mince mixture in the dish.

Beat together the ingredients for the custard topping with a fork, then pour the mixture over the beef mince.

Place bay leaves on the top and bake at 180℃for 35-40 minutes until the custard is firm and golden brown on top.

Serve with the sweet yellow rice.

Cape Malay sweet yellow rice

Place the rice, water, cinnamon sticks, cardamom pods, salt and turmeric into a large pot and boil for 7-8 minutes.

Once the rice is cooked, rinse it in a colander with cold water and remove the cinnamon sticks and cardamon pods.

Place the rice into a microwave-safe dish, evenly dollop the butter over the rice and do the same with the sugar. Give the rice a good stir, then add your raisins and give the rice a quick toss to distribute the raisins evenly.

Place the rice into the microwave for 10 minutes (covered). The rice should be fluffy and shiny.
