Japanese Senbei (Rice Crackers)

2 cups Akila Sushi Rice, cooked and cooled
½ tsp salt
1 tsp soy sauce
2 Tbsp sesame seeds
Optional toppings
Seaweed strips (nori), black pepper, or chili flakes

Add the cooled rice to a bowl and season with salt, add the soya sauce and sesame seeds and mix.

To make the rice easier to mold, gently crush and mash it with a spoon or spatula, leaving some grains intact for texture.

Preheat the oven to 175°C. And line a baking sheet with baking paper.

Roll about a spoonful of rice into a ball, then flatten it with your fingers or between 2 pieces of baking paper until a thin disc is formed. Repeat with the remaining mixture.

Arrange the rice discs on the baking sheet and bake for 10-12 minutes, then carefully flip and bake for another 10-12 minutes, or until the sides begin to brown and the crackers become crispy.

Remove the senbei from the oven; sprinkle toppings such as crushed nori, black pepper or chilli flakes on top and allow to cool completely before serving.
