Poké Bowl

Golden rice studded with dried fruits, this easy pilaf is fragrant with cinnamon, cardamom and orange.

1 ½ cups Akila Basmati Rice
4 cups water
4 garlic cloves, finely minced
1 medium onion, diced
2 small green chillies, chopped
½ cup orange juice
1 tsp dried basil
1 tsp cinnamon powder
½ tsp turmeric
1 tsp cumin powder
3 cups vegetable stock
½ cup dried apricots
½ cup raisins
½ cup dried cranberries
Salt, to taste
Pepper, to taste
½ cup cashews, toasted
Raita dressing
1 ½ cups double cream yogurt
2 cloves garlic, peeled
Handful of fresh coriander, roughly chopped
½ cucumber, roughly chopped
1 tsp cumin powder
1 large green chilli
2 Tbsps lemon juice
Salt, to taste
Pepper, to taste

Jeweled Basmati Pilaf method

In a saucepan, combine the rice with 4 cups of water. Bring to a boil, lower the heat, cover with the lid, and simmer gently for 30 minutes or until the water has absorbed. If the rice isn’t cooked to your liking, add ½ cup of water and simmer until absorbed.

Heat oil in a large skillet/ frying pan. Add the onion and chilli and saute over medium heat until translucent and soft.

Mix the rice and the remaining ingredients (except the nuts, salt and pepper). Cook over low heat, stirring frequently for about 10 minutes, allowing the rice to become fragrant.

Stir in the nuts and season with salt and pepper.

Place all ingredients into a blender and blend until smooth.
