This classic treat is lightly sweetened and offers a comforting, cosy taste of South African tradition in every spoonful.
Preheat the oven to 180℃ and grease an oven dish, or ramekins for individual servings.
Heat milk in a large pot and add your cooked rice. add cinnamon and raisins.
Whisk the egg yolks, vanilla, sugar and salt in a bowl then slowly add your rice mixture.
Beat the egg whites until stiff peaks form, then fold into your rice mixture.
Pour your mixture into the prepared oven dish or ramekins and place in the oven.
Bake for 30-40 minutes or until set.
Once done, remove from the oven and allow to cool for 5 minutes, then sprinkle some white sugar on top and blow torch until the sugar caramelizes, don’t let it get too dark.
Serve with maple syrup or berries.
