Whisk together all the peanut sauce ingredients in a bowl until well combined, then set aside.
Cook rice according to package instructions.
While rice is cooking, heat oil in a pot over medium-high heat.
Add the onions and fry for 5-6 minutes until just softened.
Add the curry paste, ginger and garlic, and fry for a minute, stirring to prevent sticking or burning.
Add the mince, soy sauce, fish sauce, salt, pepper, and turmeric and fry until the meat is browned.
Add the stock and reduce the heat to low-medium, cover the pot with a lid, and let it simmer for10 minutes.
Add the snap peas and coconut milk and cook for another 5 minutes.
Remove the lid, increase heat to high and simmer for 2-3 minutes until liquid has reduced
Remove from the heat and serve while warm, with the cooked rice and a garnish of fresh coriander, with the peanut sauce on the side.
