Packed with flavour and ready in under 30 minutes, a perfect dinner for those busy days.
Heat the olive oil in a medium pot over medium heat, add the onion and sauté until translucent
Add the garlic and ginger to the pot sauté for a further 5 minutes until fragrant
Add the Thai curry paste, curry powder and honey, stir until well combined and allow to cook for 2-3 minutes.
Add the fish sauce, rice wine vinegar and sesame oil and stir, cook for a further 5 minutes, stirring occasionally.
Pour in the coconut milk and stock, stir to combine and allow to simmer for 6-8 minutes until fragrant and slightly thickened.
Add salt and pepper to taste.
Assemble the bowls by adding the rice as a base, and a few slices of chicken per bowl and top the bowls with the garnish.
Carefully pour the sauce around the sides of the bowl, being careful not to pour over the garnish.
Sprinkle the peanut crumble over the bowl and serve
