A South African twist on a crispy rice favourite, topped with a rich and flavourful snoek pâté for the perfect bite.
Rinse the rice in cold water until water runs clear.
Drain the rice and place into a pot with 2 ¼ cups water. Cover, bring to a boil, then turn down to a simmer and cook until all the water has been absorbed by the rice.
Remove from the heat and set aside, covered, for 10 minutes.
Whisk together salt, sugar and vinegar into the sugar is dissolved, then fold into the rice while it’s still warm.
Place the rice into a cling film lined rectangular baking dish, making sure to press the rice down firmly. Cover with cling film, then refrigerate for 30 minutes to firm up.
For the Snoek pâté, mix all the ingredients well until combined.
Gently remove the rice from the cling film and place onto a chopping board. Using a wet knife, slice into bite sized rectangles or squares.
Heat canola oil in a pan, then fry the rice pieces until crispy and golden on both sides.
Drain on kitchen paper to remove any excess oil.
Place the crispy rice pieces onto serving platter, top each one with a generous amount of Snoek pâté then garnish with a final sprinkle of spring onion.
